Debaryomyces hansenii is a halotolerant and xerotolerant yeast belonging to the phylum Ascomycota (family Debaryomycetaceae). It is considered as an eukaryotic model for the study of adaptation to hypersaline environments. Its extraordinary ability to grow under osmotic, oxidative, and pH stress conditions, together with its non-pathogenic nature and GRAS/QPS (Generally Recognized As Safe/Qualified Presumption of Safety) status, have positioned it as a reference microorganism in food, environmental, and agricultural biotechnology. In the last decade, the emergence and improvement of “omics” technologies and controlled bioprocesses has renewed interest in this unconventional yeast, revealing unique molecular adaptation mechanisms and an untapped potential in the context of biotechnology.
